Carrot Soufflé

Ingredients:
1 lb. carrots
1/2 cup margarine
1 tsp. vanilla extract
3 eggs
3 tbs. flour
tsp. baking powder
1/2 tsp. salt
1 3/4 cup sugar
Cooking spray

Preparation:
Preheat oven to 350°.   Wash & scrape carrots & boil until soft. Drain and mash.  Add margarine, vanilla, & eggs & mix well.  Sift together flour, baking powder, salt, & sugar. Add to carrot mixture & blend until smooth.  Spray a baking dish with cooking spray.  Pour carrot mixture into disk & bake for 45 minutes.
