SOUTHERN SHRIMP STEW
INGREDIENTS:
1/2 cup chopped green bell pepper
1/2 cup chopped onion
1 tbsp. vegetable oil
1 tbsp. cornstarch
1 can (28 oz) stewed diced tomatoes
1 tsp cajun seasoning
1 cup cut okra
1 1/2 lbs. medium shrimp, peeled and deveined
3/4 cup quick-cooking rice
1 1/4 cups water
DIRECTIONS:
In a large Dutch oven cook bell pepper and onion in hot oil till tender. Stir in cornstarch. Add entire contents of canned tomatoes, cajun seasoning, okra, rice and water. Bring mixture to boil, then reduce heat. Cover and simmer for 10 minutes, stirring occasionally.
Stir in shrimp, and simmer for 15 minutes.
